Einkorn is the oldest variety of wheat known to man.  It does not contain genes like in our modern day wheat varieties so it tends to be much less reactive for the gluten sensitive individual.  When naturally leavened, einkorn makes a light, yet rustic and flavorful bread.  This natural leaven contains lactobacilli and yeast that live naturally on the grain and are best suited to making breads with this grain.
